About the Wine: Vinification is traditional, in stainless steel vats. Horizontal pressing with a pneumatic press. Reception of the musts in the vats by gravity. Settling, 24 – 36 hours before fermentation. Only alcoholic fermentation is carried out to preserve the aromas. Racking from January, clarification and light filtration before bottling.
Winemaker's Tasting Notes: A wine with a pale, lime colour. The intense and pronounced nose of citrus, where the aromas of lychee, grapefruit and peach dominate. Round and powerful in the mouth, it offers good acidity and pleasant length.
Serving Suggestion: Our white wines are particularly appreciated with fish, crustaceans and shellfish and, of course, the famous Crottin de Chavignol, or simply as an aperitif.
