About the Wine: Saffredi is Fattoria Le Pupille’s flagship wine. This wine is the outcome of Elisabetta’s intuition and aspiration to make a great wine in Maremma, a wish realized with Giacomo Tachis’s precious help. Saffredi is a special dedication to Fredi, the one who inspired Elisabetta’s passion for wine.
Winemaker Tasting Notes: Dense ruby red. Very elegant and complex bouquet, with hints of blueberry, black currant, black cherry, sweet spices, boise and tobacco notes. Harmonious, with dense and integrated tannis of great finesse. Goes on for minutes.
"Mesmerizing aromas of sandalwood, lavender, sage and currants. Mint and spearmint. Lead pencil shavings. Light coffee bean too. Medium to full body with ultra-fine tannins. It goes on for minutes. 60% cabernet sauvignon, 30% merlot, and 10% petit verdot. So approachable already, but this will age beautifully. Best after 2026 and beyond."- James Suckling.
"The Fattoria le Pupille 2021 Saffredi is 65% Cabernet Sauvignon, 25% Merlot and 10% Petit Verdot that offers seamless integration of dark fruit flavors that bleed directly into spice, Tuscan cigar and earthy iris root. This vintage is compact and firm, especially in terms of mouthfeel, and there are graceful floral tones to close. The winery team has been tweaking the oak regime, landing on 60% to 65% new oak complemented by once-used barrels. They've been working in this manner since 2019 to establish sweet and integrated tannins."- Robert Parker's Wine Advocate.
Serving Suggestion: Hare pappardelle with pears in wine and smoked pecorino, pigeon with pine nuts and radicchio.
Varietal: 60% Cabernet Sauvignon; 30% Merlot; 10% Petit Verdot.
