About the Wine: Our Jadis cuvée is a blend of three grape varieties grown in our region. Chardonnay dominates with 60%, followed by Pinot Noir with 30%, and finally, Meunier with 10%. The grapes harvested in 2011 come from the prestigious Crus de Cumières and Hautvillers (1er crus), with the juice coming from the têtes de cuvée of the first two pressed. Fermentation takes place 100% in oak barrels, followed by aging for 9 months. Our vintage is corked with cork during the first corking, then it rests on slats for 10 years, thus acquiring all its complexity. Jadis is an extra-brut champagne, with a dosage of 5 g/liter composed of reserve wine and cane sugar.
Winemaker's Tasting Notes: The 2011 vintage of our Jadis cuvée perpetuates the emblematic style of Maison Caillez-Lemaire, while reflecting the unique characteristics of this year: aromatic intensity, flesh, warmth and length. This champagne is a real pleasure for lovers of full champagnes, perfect for relaxing moments by the fireplace. You can enjoy this bottle without fear, by keeping it in the cellar for three to four years.
Serving Suggestion: We recommend serving our Jadis in a wine glass, at an ideal temperature of between 10 and 12 degrees Celsius, in order to fully benefit from its palette of aromas. At the table, it goes wonderfully with tender, creamy and autumnal dishes. For a tasty gastronomic experience, we suggest you taste this champagne with poached Bresse chicken, served with cream sauce and mushrooms, or even with truffle dumplings. These delicious pairings will highlight the full expression of our Jadis vintage, thus offering an unforgettable taste pleasure.
Varietal: 60% Chardonnay, 30% Pinot Noir and 10% Pinot Meunier.
